As a first-time mama, I lack serious time to make a healthy + delicious breakfast. I wake up starving most mornings and I am unable to get to the kitchen right away (GBB and I have a good ol’ nursing session first thing in the morning!). I eventually make my way into the kitchen for coffee (this is a priority) and whatever food that I can find that is “breakfast” enough. I have been known to eat cold leftover meatloaf for breakfast. No shame.
With that being said, I recently discovered overnight oats. I was perusing Pinterest for an oatmeal lactation cookie recipe (see my post on these yummy treats here) and stumbled upon the greatness that is OO.
Not only is this a delicious breakfast but it is soooooo easy to prepare. I literally make my overnight oats at night (duh) and place my mason jar in the fridge and BAM! breakfast is ready and waiting. Steel cut oats are my ultimate favourite because I’m really into the nutty + chewy texture but I’m sure you can use old-fashioned cut oats too. I wouldn’t recommend using quick-oats/instant oatmeal…unless you want to eat mush.
Another great thing about OO is the ability to switch up the flavour! I change it up every night because I like to get crazy like that.
Overnight Oats consist of:
-1/3 cup of oats
-1/3 cup of either vanilla or plain yogurt (or greek; you may have to add more milk as it’s very thick)
-1/3 cup of milk (cow, soy, coconut, almond; whatever floats your boat!)
-cinnamon
-honey or maple syrup to sweeten (or leave as is, which I do when I use vanilla yogurt!)
Mix these ingredients together, add your desired toppings + place in a sealed container, pop in the fridge and your overnight oats will be ready in the morning.I’ve created three flava flavs that I’m super into these days: Coconut Peach, Berry Vanilla, + PB and Banana but really you can add whatever your heart desires.
Coconut Peach; I add a few sprinkles of sweetened coconut (I bet unsweetened would be better but I didn’t have any in my pantry) and mix it with the oats. In the morning I cut up a fresh peach and mix it into my oats.
Berry Vanilla; I add in frozen mixed berries. You can add them into the mixture before or after you place it in the fridge, but keep in mind the frozen berries will melt so you may want to compensate with a few more oats for your desired consistency.
PB and Banana; I mix in a small mashed banana and a tablespoon of peanut butter to the oats before I place it in the fridge.
You can literally switch up the toppings and create the perfect consistency; some may like it more milky or more chewy. Oh, and I think a Nutella version would be incredible…
