As I am an avid Pinterest-browser + Instagram lover addict, I had been stumbling upon mini pies and homemade pop tarts for awhile now and figured it was mighty time that I make them (and enjoyed them, obviously!).
Admittedly, I used ready-made pie crusts as time has been a little sensitive with GBB lately. I used Tenderflake but Pillsbury has great crusts too + even better would be homemade pie crust, obviously!
I will be sharing my darling friend Sharon’s recipe for the most simple + delicious pie crust on the blog soon. She is an incredible savoury + pastry chef and her recipes are hands down my favourites, always.
So. How did I make these adorable mini pies? Easy!
- I rolled out the dough and used cookie cutters to make my shape (I chose hearts because I’m romantic like that).
- Then I placed a raspberry jam (my favourite!) in the middle of the heart with a little water around the edges so the top pie heart would stick!
- I didn’t use too much jam because they’re mini and I didn’t want the jam to explode too much out the side. Jam still poured out the sides + I think if I used bigger cookie cutters/shapes, this wouldn’t have happened…ugh, I love raspberry jam so much, you guys. ANYWAY.
- I used a fork to adhere the sides together and cut a cute little x in the middle to let a little air flow happen.
- I placed them on a baking sheet lined with parchment paper. Preheated the oven to 400 degrees and baked the pies for 10-15 minutes. Make sure to watch them! These beauties are ready when they are golden brown!
While the mini pies were baking, I made a simple glaze (icing sugar, milk, a hint of vanilla) for a little extra sweet drizzle and then I topped them off with pretty valentine sprinkles, of course! Taa-daa!
These were so easy and the flavours are endless (um, hello s’mores pies!). Oh, it should definitely be noted that my non-sweet eating hubs approved of them which is definitely saying something! He was a teensy bit sad I didn’t leave him more to enjoy…sorry hubs.

Yes, I think so!! I would recommend putting them in a really well sealed container in the fridge :) let me know how it goes! (they’re so freakin delish!!) XO
