You know what’s delicious? Magic Mix. And why is it so tasty? Because lucky charms are the bomb diggity, that’s why.
For the last three years, without fail, I’ve bought a box of lucky charms around St. Patrick’s Day. I like to make some yummy festive treats with them (and always sneak off to devour enjoy a bowl or two). I never grew up on sugar cereal + if my sister and I were lucky, we would be able to have a sprinkle of sugar on our Shreddies. So, it is quite a treat to have a box of this sugary deliciousness sitting in my cupboard (and in my belly!). Hubs will tell you over and over and over how much he hates having this cereal in the house but I think it is a fun tradition that I hope will make St Patrick’s Day a little bit more festive for our family as the years go on. Andddd I will stick to my guns of buying only one box + one box only…(eep!)
A few years back I used lucky charms to top a vanilla cupcake and I’m fairly certain last year I enjoyed them as is, but this year, this year, I’ve decided to make a popcorn Magic Mix similar to my halloween Monster Mash + oh em gee, my friends, it is deliciously addictive. You’ve been warned.
It is a very easy treat to make + I’m sure the little ones in your life would be very excited to help out. George would’ve loved to help with this but I made it during nap time…He is obsessed with the little marshmallows and sprinkles. I sorta kinda totally made the mistake of introducing the marshmallows and sprinkles to him while he was “cooking” in the kitchen with me last week…he hoovered the sugar + cried when I wouldn’t give him more. And by cry, I mean, toddler cry/freakout. WHICH BREAKS MY HEART. Because I freakin’ get it! I love those dang marshmallows and pastel sprinkles too + if I was signing “more” over and over again and still no sugar, well, I’d cry too. Sorry bubs. PS We went outside to get some space and the wiggles out shortly after + it definitely helped, almost immediately. Phew!
ANYWAY.
You will need:
- chex cereal (or shreddies will do!)
- lightly salted popcorn
- lucky charms cereal (up to you if you want to add in some of the
boringcereal or just pick out the mallows) - pretzel sticks
- white chocolate/white melting wafers
- sprinkles of your choosing (i like the pastel star ones!)
How to (the very super official method to this super easy non-bake treat, ha!):
- pop your popcorn (I usually make mine on the stove but I totally bought already popped popcorn this time) + sprinkle with sea salt, set aside
- spread popcorn on baking sheet
- break pretzels onto popcorn
- add a handful or two of chex cereal
- throw on some lucky charms marshmallows (and cereal too…)
- in a double boiler, melt your white chocolate + make sure to stir often, you do not want burnt chocolate (hashtag nasty!)
- once chocolate is melted, drizzle/spoon onto popcorn mix
- toss gently (this can get real sticky, realllll fast!) + add sprinkles too!
- once coated, press down to ensure the whole tray is covered
- lightly dust a few more sprinkles on top
and voila! Try your dang hardest not to shovel the whole thing into your mouth immediately. Also, this treat is sorta kinda totally a chocking hazard so kiddies, stay away! If you want to make it a bit more kid-friendly, I’d remove the popcorn ;)
Personally, I love love love to make sure I add a lot of the pretzels + salted popcorn because the white chocolate can get hella-sweet and I’m all about the sweet and salty combo. I mean, who isn’t?!
